Pickled Red Onions

This is a quick pantry basic. I love this recipe because it’s simple, easy, you likely have all the ingredients on hand, and it goes with everything. Turkey sandwich on rye, BLT, Italian cold cut, steak tacos, nachos, and more.

Pickled Red Onions
1 red onion, peeled and thinly sliced
juice of 1 lime
1 T orange juice
2 T red wine vinegar
1 t salt
1 t pepper
1 t oregano
1 garlic clove, minced

Preheat the broiler. On a sheet pan, lined with parchment spread out the onions. Broil for 5 mins .

Combine lime juice, orange juice, red wine vinegar, salt, pepper, oregano and garlic. Mix with a fork.

Put the onions into a pint size container that has a lid. Pour the “sauce” over the onions, tossing the onions with the sauce to coat evenly. Cover and store in the fridge for one hour or more before serving. This will keep for several weeks in your fridge.
