Mashed Sweet Potatoes

In keeping with the simple side theme for Thanksgiving, I give you mashed sweet potatoes.

Mashed Sweet Potato
1 small potato per guest
1 tsp butter per potato
pecans
salt

Preheat your oven to 400°. Using a fork, poke a few holes into each potato. Bake, on a foil lined sheet pan, for 45 minutes. Check to see if the potatoes are fork tender. You should easily insert the fork in and pull it back out. If the potatoes need more time, check every five minutes for the next fifteen minutes.

Once removed from the oven, allow the potatoes to cool to the touch. Peel the skins off. This can be done by pinching the tip of the potato and pulling the skin away, just like a banana. You don’t need tools for this.

In a large bowl, using a fork, mash the potatoes, add the butter and pinch of salt. Garnish with chopped pecans.


This recipe can be a made a few days ahead and reheated in the oven at 350° for 30 minutes. Stir and serve.
