Simple Lemon Dressing

The boys and I have been enjoying grilling pizza on our pizza nights, and one of my favorite pizza toppings is salad greens. It sounds silly, I know.  I keep the toppings pretty minimal for this and go with cheese or pesto, and pile the salad right on top.  And just like the pizza itself, I keep the salad simple too.

Let’s get to it.


I begin with extra virgin olive oil. Making this right in a glass measuring cup.


Adding to it, lemon zest and lemon juice.


And then, salt and pepper to taste. It doesn’t get much easier. Whisking it all together.

For the greens, I prefer arugula with both pizza and this dressing because I like the peppery flavor, but you can pick anything!  I add to the arugula a handful of parsley leaves.


And shaved grana padano for garnish.  (I prefer to buy a block, and use a vegetable peeler and shave it as needed.)

Just before serving, I add the dressing.

Simple Lemon Dressing
Makes enough dressing for four salads (I always have leftovers and this keeps in an airtight container in the fridge for a few weeks.)

1/2 extra virgin olive oil
zest of 2 lemons
juice of 2 lemons
1/2 to 1 tsp salt
1/4 to 1/2 tsp fresh cracked pepper

In a glass bowl, whisk together the oil, lemon juice and zest.  Add the salt and pepper.  Taste for flavor, adding salt and pepper if needed.

Mix into your favorite greens, I recommend arugula.

favorite herbs such as parsley, basil, or oregano
grana padano, parmesan, goat cheese, feta
