Well, it’s the last day of school, and I COULD NOT BE HAPPIER ABOUT IT! I have been mentally counting down since there were 31 days left. It’s a problem, but one I can live with. In honor of the last day, I am feelin’ all things summer.
I am feelin’ the SUMMER BUCKET LIST.
This is a tradition I started with the boys many years ago. Early on it was the zoo, and the pool, and snowballs. While those things remain, they have been upping their game recently, down to what movies we should go see, and the often requested cruise (not happening this year, it’s actually never happened.) Here is the summer’s list. What do you think?
Based on the list, we are definitely going to be spending time in the Pilot, and nothing makes me happier than jamming to some tunes with the windows down.

The long and short you make the cut if you are Post Malone, Imagine Dragons and Marshmello. There is no greater gift than watching my kids rock out when no one is watching. That’s a lie. The gift is when they let me sing with them.
Last, with summer here, I am feelin’ simple food.
Let’s be honest the late nights by the pool or on the baseball field, or wherever you maybe spending your time, means meals need to be simple. It can’t be all snowballs and pizza – well, it can, but that’s a different can of worms. If your bucket list has picking strawberries on it, this is the recipe for you.
Strawberries Au Poivre serves 4
2 pints of strawberries, hulled and quartered
1 tsp cracked black pepper
1 T Pernod
1-2 T heavy cream
In a bowl, combine the strawberries, black pepper and Pernod. If you aren’t ready to serve, cover and put in the fridge for up to three days. Just before serving, coat with cream.
This is a great dessert, breakfast and easy side to any meal. It sounds weird, I know, but you won’t be disappointed.
